Sri Lankan Recipe

Eggplant Curry

1 lb. eggplant
1/4 t. turmeric
1-1/2 t. salt
Oil for deep-frying
2 green chilies
2 small onions, chopped
2 t. ground coriander
1 t. ground cumin
10 curry leaves
1 cinnamon stick
1 c. milk
1-1/2 t. salt
3 cloves garlic, chopped
1-1/2 t. ground mustard
2 t. sugar
1 2-inch piece rampa

Slice eggplant into thin 2 inch long pieces, sprinkle with turmeric and
salt.  Deep-fry until golden.  Combine everything else until golden, bring
to a boil.  Add eggplant and simmer until thick.
